Gravy and Beef on Bread Shingle

It's time to begin the comfort food makeovers!  I mentioned that I would be doing so this twelvemonth, and I'm not nigh to let Y'all down.

I know I can't be the only one who grew up eating S.O.S., too known every bit Creamed Beef on Toast, or Shit on a Shingle.  As a kid it was 1 of my favorite dishes, since it was only made occasionally. (I don't think my female parent really enjoyed it all that much, merely my father did.)

I'g non sure if my liking for this dish stemmed more from the fact that I could usually manage to skid in one expletive word without getting in too much trouble, or the fact that anything that included beef and cream is something I find strangely wondrous.

My mother's version of SOS was always made using cream of celery soup (Yeah, condensed, from a tin.) Ii pounds of hamburger, and possibly an onion or two tossed in for skillful measure.  Near of the recipes I've seen that utilize canned soup call for cream of mushroom, but my mother had issues digesting them, so they were never a staple in my babyhood home.

The original recipe calls for neither celery or mushrooms, so I may take drifted completely off course with this update/remake, but I don't recall so.

I toyed with the idea of naming this dish "Chier sur un bardeau", merely why rename Shit on a shingle to the same affair in a different language?  It is what information technology is, a food staple that caught on in the U.Southward. (And England besides, I believe.) during the start and second world wars and the great low.

Inexpensive, filling and at least somewhat tasty.  It provided a lot of sustenance for very picayune money, and gave the family something hot and satisfying to share around their table. In that respect, Shit on a shingle (Or but S.O.S., if you aren't comfortable tossing four-letter of the alphabet words around your dinner table) is condolement food at its very all-time.

For me, it'due south a reminder of a different era, time spent with my mother and sister in the kitchen, and the adept and bad times that followed.   In short, even though this is an updated version of the original, information technology takes me home.  It's likewise quite messy, which makes for giggles at my current table, where my married woman and I endeavour not to get too much of the sauce on our faces!

A new twist on the classic recipe for S.O.S. (Too known every bit Shit on a Shingle)

Ingredients

Toast:

  • i pocket-size loaf french bread, cut in one/2-inch slices.
  • i/4 cup extra virgin olive oil
  • garlic pulverization
  • onion pulverization

Sauce:

  • 1/2 pound basis beef

  • i Tablespoon Worcestershire sauce
  • 4 ounces push button or crimini mushrooms, sliced
  • 3.five ounces shiitake mushrooms, sliced
  • iii cloves garlic, minced
  • 1 tbsp. all purpose flour
  • 2 tbsp. sour cream
  • 1/2 – 3/4 cup milk
  • Table salt and pepper to taste.

Instructions

    Toast:

    1. Preheat oven to 375°
    2. Arrange bread slices on a one-half-sail pan or large cookie sail. Brush with olive oil and sprinkle generous amounts of onion and garlic powder over the height. Bake at 375° until tiptop is golden, flip and brush other side of bread with olive oil. Return to oven until the staff of life is golden chocolate-brown and crisp. (Virtually 7 minutes total.) Remove from estrus and set bated. May be served hot or cold, works perfectly equally a crouton for salads or soups, or equally base for a crostini.

    Sauce:

    1. Brown ground beefiness and ground pork in a large skillet over medium to medium high heat. Once all meat is well browned, transfer to colander to drain. (Do this over a large bowl to catch any drippings. You don't want them in your drains.)
    2. Wipe skillet clean with a newspaper towel, add together 2 Tablespoons olive oil and reheat. Add onions and cook until soft and simply translucent (About 4 minutes).
    3. Add garlic and melt ane minute, stirring frequently to avoid burning. Add shiitake mushrooms, cook for 1 infinitesimal, then add together button mushrooms. Go on cooking vegetable mixture until mushrooms are gilded.
    4. Season vegetable mixture with salt and pepper. (Doing this earlier cooking the mushrooms would significantly lengthen browning time.) Return basis meat to pan and stir to distribute all ingredients. Sprinkle flour over mixture and stir well to distribute and coat pieces evenly. (almost ane minute or until the flour smells nutty.)
    5. Add milk and sour cream, and Worcestershire sauce, stirring constantly until liquids are just below a boil. (Do not let the milk boil. If you lot do, information technology will split and curdle. Definitely not a good matter.) Remove from heat, exam for seasoning.
    6. Serve approximately 1 tbsp of mixture per slice of toast.

    What I would have done differently

    I think a petty Pecorino  Romano sprinkled over the top would be a dainty addition, as would a scrap of fresh parsley mixed in the sauce at the concluding minute for freshness.
